BTW, I used the mixer yesterday to make butter blend, our version of the soft butter--3 sticks salted (our taste, you may prefer unsalted) butter and a cup of olive oil blended together on a medium high speed. This recipe can be adjusted to 2 sticks of butter and 2/3 cup olive oil or 1 stick of butter and 1/3 cup of olive oil but in the latter case I'd do it by hand or use a hand mixer.
