Marie-Joseph Paul Yves Roch Gilbert du Motier de La Fayette, Marquis de La Fayette (6 September 1757 - 20 May 1834), known in the United States as Lafayette, was a French aristocrat, freemason, and military officer who fought in the American Revolutionary War, commanding American troops in several battles, including the siege of Yorktown. After returning to France, he was a key figure in the French Revolution of 1789 and the July Revolution of 1830. He has been considered a national hero in both countries. In a heavy pot, 5 quart or larger, heat oil over medium heat, warming the pot first. Add onions, celery, and green pepper. Turn heat to high. Stirring frequently, add garlic, file, hot sauce, and the pepper-herb mixture. Cook for 5 minutes, stirring constantly. Add tomato sauce, and stir as it reduces over high heat. Add fish stock and bring to a boil. Reduce heat, and simmer for 1 hour, stirring occasionally. When ready to serve, add shrimp, oysters, and crabmeat. Cover, and wait 5 minutes.
