Subj : Chile 4404 To : All From : Dave Drum Date : Sun Oct 27 2013 07:11:46 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Arabian Cauliflower w/Tahini Categories: Vegetables, Chilies, Citrus Yield: 5 Servings 1 sm Head of cauliflower; in - florets 3 cl Garlic; chopped 1/2 c Tahini; lumps mashed with a - fork 1 ts Ground cumin Juice of 1 lemon Salt and pepper Hot pepper sauce 3 tb Water; as needed MMMMM-------------------------GARNISHES------------------------------ Paprika Chopped parsley and/or - cilantro Lemon wedges Creamy tahini makes a super dressing for cauliflower in this traditional Middle-Eastern meze. Dip into it with a chunk of bread. From Marlena Spieler, Chronicle columnist. Boil cauliflower until just tender; do not overcook. Drain and set aside. Mix garlic with tahini, cumin and lemon juice. Season with salt, pepper and hot pepper sauce. At this point mixture is a thick paste. Add water tablespoon by tablespoon until mixture is creamy, then mix with the cauliflower. Cover and refrigerate until ready to serve. At serving time, garnish with a sprinkle of paprika, chopped parsley/cilantro and/or lemon wedges. Serves 4 to 6.
