The chickens must have had some contact with migratory birds.  If you've
ever been on a farm, migratory birds are all around, even in the barns.  I
would assume that they can get into the barns at the egg farms, too.

Once a "close quarters" chicken gets the flu, all of the other chickens in
that area could have it.

I cannot explain Mexico, other than I would assume that they don't have
such strict rules about how many birds they have to euthanize if they are
believed to have come in contact.
