Singing uses different parts of the brain than speech because tones and rythm are as important if not more than words, and playing an instrument also restructures coordination and muscle memory. i imagine teaching a computing language (or even a foreign language) would stimulate structured thinking. My parents used to play crossword puzzles and see who could finish first. After my mother passed away, I haven't seen him doing as many puzzles. One of my father's cousins is worried about Alzheimers, and his doctor told him to write his "memoirs" and write about random stuff that happened in his life. I volunteered to help proofread parts of it.
