VERY. Now it seems I have access to a vGPU (not sure if this will fix
the fact that I was never able to use a linux desktop environment, but
WinXP installed just fine), and if I was interested, any of the vSphere
stuff seems to be allowed now.

Definitely operating fine. I could probably have had 8 VMs running while 
I had that limit, and it still wouldn't have been using all the CPU or 
ram. I always kept one core free in case I needed to setup a new VM for 
something, but now I'm fairly certain I can go over by a bit, since 
nothing is stressing the server any worse than my BBS is (granted it's 
Synchronet and has multiple built in servers - 
telnet/ssh/http(s)/ftp(s)/etc, but there isn't a ton of traffic, either). ;)
