I hate to be anti-climactic but I believe cow.demon.net was just a dial in host. From what I remember they all had 'wacky' names, I think many of them were plays on the demon theme.

Some things were named for their boring functions, like "pop", I think the     server that tried to push your mail to you was called "punt" (you had a static IP and could just run an SMTP server on your computer to receive mail for your sub-domain).

Those were the days :)
