(Charlie Papazian). Sorry, Kurt, here's an example where a little knowledge is a dangerous thing. We are talking about a sweet flavor, not the existence of non-fermentable sugars. The dextrins that Papazian is talking about are tri-saccharides, and cannot be fermented by yeast. They also do not taste sweet--they give a rich "mouth feel", a sense of "body" in beer. Dextrins are what makes a rich beer like Pilsner Urquell taste different from Budweiser. But dextrins most definitely do not taste sweet. Don't take my word for it, go look up "dextrins" in the index of your Papazian books, he describes this quite clearly.....
