I always assumed that any 'real' items needed during a program were replicated offstage and handed off to the holographic (incidentally, I *hate* that it's called holographic - holograms aren't solid, dammit) parts of the program. The alternative, that it's actually holographic food, is just too weird - you'd have a big hole full of nothing in your stomach when you walked out the door.
