It's SO easy!  I always hit it with fresh rosemary and ground pepper,  It 
always comes out flat and really good.  The kind I hadthis morning is an 
old fashioned type that has a rind.  If you cook it correctly the rind 
puffs like pork skins.

When morrison was here he laughed at what we call bacon.  They are more 
used to something like Canadian bacon.  I guess country ham would be 
somewhat similar, although very salty and dry by comparison.
