While in Kansas City Friday I had the same discussion when talking about local BBQ. There are a lot of places where they start with the same basic red sauce and add more and more of their toxin of choice, the taste doesn't change at all, but the length of time it takes your lips to stop burning does. This to me goes against most of the precepts of good cooking, and into the realm of hazing. Jack Stack BBQ in KC is alright for a chain, they make a nice beef brisket with a respectable smoke line. Their smoked ham is kinda plain... I didn't try the pulled pork or sausages. The Cheesy corn bake is a creamed corn with cheddar cheese and chunks of ham very much like a chowder, it can't really be described, it has to be experienced. The best thing I had there was the bread pudding afterward which was moist, warm, and soaking in a yellow custard sauce that tasted vaguely like an egg nog. -- "Do not seek to follow in the footsteps of the wise.
