I don't know enough about the chemistry and the distilling involved to know how much character the spirits keep from their feed stock, but a lot of what you taste in the drink happens in the aging process after the spirit is distilled. You could for instance have problems with Tannin which comes from the skin of grapes used to color red wines, and blush wines, but Tannin also comes from Oak barrels and casks. So suffice it to say there is other chemistry involved that isn't just the alcohol. I definitely don't know enough about brewing to say what happens to beer since it isn't the same as distilling at all. One of the Vodka distilleries they profiled was trying to come up with a pure vodka that had no impurities, and they believed, in moderation, no hangover. Tequilla likewise coems in two varieties 100% blue agave tequilla, and blends that include other non-Tequilla spirits. 100% purists believe the flavor is more mellow, and less likely to give you a hangover. -- "Do not seek to follow in the footsteps of the wise.
