Well Tequilla comes from the core of the Blue Agave, beer from grains 
like wheat, wine from grapes, rum from molasses, rye can be found in gin 
whiskey and some vodkas, and mead comes from honey.

Knowing the feedstock from which the alcohol is produced could help to 
narrow down what the reaction is coming from.

Some people have wheat allergies same as others have lactose intolerance.

Modern marvels just recently ran an episode on Distilleries that covered 
a lot of this in detail.
