Maybe the camera will have enough depth of field to JE>somewhat overcome this problem. Since you are setting up a copy station, you can get plenty of light for small apertures. Also, the color temp doesn't matter since you will likely end up with black and white (2 bit) or grayscale so you can use table lamps, spots, etc. to get the lighting needed, including into the binding, if required. You could experiment with a piece of glass on top of the book to help flatten the pages but reflections could be an issue.
