That's best left to something like True CS>Image or Ghost. I had ned of True Images capabilities this afternoon. I modified a file and saved it over the old one. Later I realized I needed some of the data that I had deleted from the old file. Opened up TrueImage, went to a previous Full Image got the file and saved it (different name) and closed True Image.
