Most decent projectors will work at higher resolutions with some sort of
dithering.  I'd suggest you just try them until you find one that suits your
purpose and price range.  Maybe a local store/business will help set up a demo
of various models as a test.

I've used Irfanview for my slide shows.  I'd suspect it's your output device
rather than software that's the biggest issue...
