Well depends if they install it themselves.

If it is preinstalled than you can leave the adminstrator account.
and give them another account with admin rights.

Failing that under nt4.0 you used to be albe to delete the *.sam files 
and reboot and create a new administrator not sure if this is still true for 
win2000/xp
