If you don't mind using a pre-release, MEPIS has some awesome installation and configuration tools. These also seem to be quite a bit more reliable than the ones included with Knoppix. There's also XandrOS. Their product line is similar to that of Mandrake, offering a standard release, a deluxe release, and a professional release. They also have a community release that has limited functionality but can be used for evaluation purposes. If you are a little more daring and want something that you can basically put together from scratch, there are also some miniature Debian distros such as Damn Small Linux or LNX-BBC which will boot you into a minimal but functional desktop environment that you can add to from the apt repositories (dpkg is usually removed from these distros to save space, so you may need to rebuild it with a command such as apt-get restore). .
