I may be doing it the hard way, but when I run install Debian 3, I use dselect, and go through a pick a few Gnome and KDE apps along with all the rest of the stuff I want. All the dependencies get resolved, and I merely have to feed in a few CD's when Debian asks for them. For stuff that isn't available on those disks, I simply go to the source. This is only painful for apps like xfce4, which require later releases of gnome libraries, but I was able to work through it pretty easily.
