If you don't get an X event, you can't assign any key sybol to it. What
keyboard driver are you using? I use a different driver with my iTouch (a
different model), which supports its volume wheel and most, but not all
of, the other buttons. Many of the buttons are automatically assigned some
standard X symbols as well...
