This is what I use:

iptables -t nat \
	-A PREROUTING -p udp \
	-d $EXTERN_IP --dport 7242 \
	-j DNAT --to-destination $RAILROAD2:7242

And I set RAILROAD2 to the IP of the person hosting a Railroad Tycoon II
game :)
