Dunno, can see the point to some extent.. afaik the "processing" of cheese was 
to make it more stable, and have a more consistant texture... not the same as 
going so far as the "chesse-food-product" goop that many refer to...

My fav cheeses are Munster, Provolone, and Mozzerella... I don't mind deli 
style "American" cheese, but not as fond of the in the plastic wrapper stuff.
