Since the system volume {SYS:} cannot be NNS anyway, the existing Netware options of mirroring and duplexing work perfectly. So you've got no worries on this score. You can put an NSS volume on your RAID 5 array for data, and find your server booting light lightning. I did a test server once - 70 gig of data volume - under "traditional" filesystems type it took almost 45 minutes to mount the volume when it was near full. Under NSS, it took about 45 seconds.
