Change the port number for 'echo' in /etc/services from 7 to 25, and comment out the 'smtp' entries to avoid a clash. Send a SIGHUP to inetd, then telnet to port 25. What you type should be echoed back to you. Use the telnet escape sequence to get out. Return /etc/services to normal and SIGHUP inetd again.
