I always bake or fry the fish I catch.  Dolphin definitely gets fried.  Get a
pan and a whole stick of butter.  Some key west spices, mmmm mmm good.  Snapper
I tend to bake because it's easier to deal with that way.  Fillets aren't as
nice as the dolphin ones are.
