MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Spinach and Lentil Soup Categories: Soups, Beans, Poultry, Chilies Yield: 4 Servings 250 g Brown lentils 2 l Chicken stock or water 1 lg Onion, chopped finely 2 tb To 3 vegetable oil 200 g Fresh spinach, washed and Stems removed, sliced into Ribbons 2 tb Tomato paste Salt Good pinch of cayenne pepper Wash the lentils and place them into a large saucepan with the chicken stock. Bring to boil and simmer, covered, for 30 to 40 minutes, or until the lentils are tender. Fry the onion in the oil in a large frying pan until golden. Add the spinach and let it cook in its own juices for 5 minutes. Add the spinach mixture to the lentils and stir in the tomato paste, salt and cayenne pepper. Add more stock or water if the soup is too thick. Bring the soup to the boil and simmer for a few minutes before serving. Bon Appetit, Exec.
