      Title: Grape Tomato Salad w/White Beans & Cucumber
 Categories: Vegetables, Beans, Squash, Citrus
      Yield: 4 servings
 
      1 c  Canned Great Northern beans;
           - rinsed, drained
      1 c  Grape tomato halves
      1 c  Cucumber; 1/2" dice
      2 tb Fine diced red onion
      1 tb Fine chopped fresh cilantro
      1 tb Extra-virgin olive oil
      1 tb Lime juice
    1/4 ts Salt
    1/8 ts Black pepper
 
  Combine beans, tomatoes, cucumber, onion, and cilantro
  in large bowl.
  
  Whisk oil, lime juice, salt, and pepper in small bowl.
  Pour over salad and mix gently.
  
  Yield: 4 servings
