I still have (2) HP DL380 servers in one of my server racks in the basement. It just holds up tools and crap I have piled on there.  Otherwise, it would be in the trash as well.

Most of the guts I have aquired from work or other friends that work in IT at other local shops.  When they pull hardware, I sometimes come over and get stuff.  I just get the guts and then buy all the upgrades to make them more modern.  That is what I have done with the SuperMicro servers.  I wanted them mainly for the chassis and backplane.  The rest I bought and replaced.

I am not aware of any local chop shop here, but have used Ebay to get lots of stuff.
