Subj : Indian Vegetarian Tostadas To : All From : Ben Collver Date : Thu Nov 27 2025 08:23:50 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Vegetarian Tostadas Categories: Indian, Vegetarian Yield: 4 Servings MMMMM---------------------------DOUGH-------------------------------- 2 tb Whole wheat flour (atta); - finely powdered 2 tb Fresh corn meal 5 tb Water Salt; to taste MMMMM--------------------------FILLING------------------------------- 1 c Fresh mushrooms; chopped 1/2 c Onions; chopped 1 c Tomatoes; chopped 1 c Green bell pepper; chopped 1/2 c Cucumber slices 1 c Paneer; crumbled 1 tb Oil 1 ts Cumin powder 1 ts Black pepper powder 1 c Homemade tomato sauce 1/4 c Green onlives; pitted - (optional) MMMMM---------------------FILLING VARIATION-------------------------- 2 c Cooked red kidney beans - (rajma) 1 c Parmesan; grated 1 Onion; chopped 2 tb Ghee 1 ts Red chili powder 1/2 ts Coriander powder 1/2 ts Cumin powder 2 Tomatoes; sliced 1 Cucumber; sliced 1/2 c Cilantro; chopped Salt; to taste Dough: Combine all ingredients and make dough as for ordinary chapatis. Filling: Saute onions and mushrooms in oil until tender. Add cumin, pepper, and salt, and stir well. Add pepper and tomatoes and cook for 2 minutes and divide filling into 4 equal portions. Filling Variation: Heat ghee and saute onions. Add cumin powder and salt. Stir in cooked beans and mash throroughly. Add coriander leaves and mix well. Spread this mixture on each tostada. Top with sliced tomato, cucumber, and cheese. Cover with tomato sauce and serve.
