Were you swinging around the bucket in microgravity (e.g., the space shuttle) and let go, the bucket would go off in a straight line (subject to local space curvature). Even in "normal" gravity, the bucket would go off in a geodesic, which looks approximately like a parabola. The water would go with it -- more or less -- until the bucket hit something: the ground, a barn wall, your computer, your neighbor's sister's lingerie, etc... So...you're spinning the bucket over your head. All you're doing is applying a pulling (accelerating) force to the bucket which is more than the force of gravity. The water more or less stays put. Just to confuse you even more :-) : the force of your arm exerted on the bucket is centripedal force -- and it's a real force, mesurable with e.g. a spring meter (such as those occasionally used for weighing fish).
