Can anyone advise me on the availability of any sort of Macintosh
software that would automatically convert greyscale or colour images
into "digitized" artwork???  

This sort of thing used to be **VERY** common as a demonstration of 
the "power of computers"  about ten years ago...but I've never heard of
any particular software that accomplishes this task...Conversion of
greyscale "levels" into assorted typographic/ASCII characters, assigned on
the relative "density" of ink of a block of characters...
