The premise of this book and its predecessor, \fIMake-a-mix Cookery\fR is that you can save time and money by making your own mixes for every stage of dinner planning. It seems to work. .IH "10 cups of mix" "2 kg of mix" .IG "2 cups" "buttermilk powder" "200 g" .IG "8 cups" "all-purpose flour" "800 g" .IG "\(12 cup" "granulated sugar" "100 g" .IG "8 tsp" "baking powder" "40 ml" .IG "4 tsp" "baking soda" "20 ml" .IG "2 tsp" "salt" "10 ml" .PH "(Pancake mix)" .SK 1 Sift the ingredients together well. Store in a container with a tight-fitting lid. .IH "10 pancakes" .IG "1" "egg," beaten .IG "2 Tbsp" "vegetable oil" "30 ml" .IG "1 cup" "water," "250 ml" or more as needed. .IG "1 \(12 cups" "buttermilk pancake mix" "700 g" (see above) .PH "(Pancakes)" .SK 1 Mix ingredients until blended together. .SK 2 Let it stand five minutes. .SK 3 Cook some pancakes. .SK 4 Eat and enjoy. .NX Use the mix within 6 months of when you make it. .PP The pancakes made from this mix aren't as sweet as those made from Aunt Jemima mix, but they are good. You can always add sugar, of course. .PP Although we haven't tried this (yet), you could probably vary the recipe by using a different type of flour to make, for example, your own buckwheat pancakes. .PP If you can't find buttermilk powder in your local grocery store, try a bulk food store. .SH RATING .I Difficulty: easy. .I Time: 5 minutes to make the mix if you have the ingredients. .I Precision: measure the ingredients. .WR Geoff Loker University of Toronto, Ontario USENET: {ihnp4 decwrl utzoo uw-beaver}!utcsri!utai!gkloker CSNET: gkloker@toronto
