It can be served either hot or cold. .IH "Serves 3\-4" .IG "6\-8" "small leeks," trimmed and washed .IG "1" "clove garlic," crushed .IG "\(12 cup" "red wine" "100 ml" .IG "1 tsp" "red wine vinegar" "5 ml" .IG "2 Tbsp" "parsley," "30 ml" chopped .IG "dash" "salt" .IG "" "black pepper" .PH .SK 1 Melt the butter and cook the leeks and garlic for 3 minutes over medium heat. .SK 2 Add the red wine and some salt and mix well. Cover and cook for 15 more minutes or until leeks are tender. .SK 3 Place the leeks on a serving dish and reduce the liquid left in the pan for 2 minutes. .SK 4 Add the vinegar and pepper to taste.
