The muffins make a delicious alternative to scones. We eat them buttered, either hot or cold. I've added the dried fruit to the original recipe as it makes them much more interesting. .IH "Makes 12" .IG "1 cup" "flour" "100 g" .IG "\(12 tsp" "salt" "2.5 ml" .IG "1 tsp" "baking powder" "5 ml" .IG "1\(12 cups" "unprocessed bran" "90 g" .IG "1 tsp" "baking soda" "5 ml" .IG "1" "egg" .IG "4 tsp" "golden syrup" "20 ml" .IG "1 Tbsp" "butter" "15 g" .IG "6 Tbsp" "sugar" "100 g" .IG "1 cup" "milk" "250 ml" .IG "1 cup" "sultanas" "150 g" (or substitute raisins, dates, etc.) .PH .SK 1 Preheat oven to .TE 425 220 . Dissolve the soda in the milk. .SK 2 Sift the flour, baking powder and salt together. .SK 3 Beat the egg well, then add the milk/soda. .SK 4 Add the golden syrup and butter which have been heated together to melt the butter. .SK 5 Add the dry ingredients and mix quickly. .SK 6 Put into greased muffin tins and bake for 12\-15 minutes at .TE 425 220 . .NX Golden syrup is a very thick sugar syrup that is readily available in countries where people drive on the left-hand side of the road, but seems to be rare elsewhere.
