RENAISSANCE POACHED SALMON Servings: 4 3/4 c. water 3/4 c. beer 2 T. minced fresh parsley 1/4 tsp. dried rosemary leaves 1/8 tsp. dried thyme 1/4 tsp. salt 4 fish steaks (salmon, halibut, striped bass, etc) vinegar to taste sprigs of parsley In a large saucepan combine all ingredients except fish and parsley. Bring to a boil, reduce heat, and simmer 5 minutes. Place fish steaks in saucepan, cover and poach 10 minutes or until fish flakes. Remove, and serve garnished with parsley.
