SALMON STEAKS WITH CUCUMBER SAUCE Servings: 4 4 4oz. salmon steaks, 1/2 inch 1/3 c. unpeeled cucumber, shredded 2 T. butter, melted 1 T. fresh parsley, chopped 2 T. lemon juice hot red pepper sauce (opt) 1/2 c. sour cream 1/2 tsp. salt 1 tsp. chives, chopped Place steaks in 8 X 12 inch microwave dish. Mix melted butter, lemon juice and pepper sauce, and brush over steaks. Cover with waxed paper. Microwave at "high" for 8-11 minutes, rotating dish 1/2 turn every 3 minutes. Combine sour cream, cucumber, parsley, chives and salt, and spread mixture over hot steaks. Microwave at "high" 1-2 minutes until cucumber is heated through. Source: _Tacoma News Tribune_
