SALMON SALAD ON THE HALF SHELL Servings: 6 3 avocados 1 1/2 tsp. lemon juice lettuce 1 sm.clove garlic, minced 1 15oz. can salmon, chilled 1/8 tsp. dry mustard 2 T. green onion, sliced 1/4 tsp. salt 2 T. celery, sliced dash pepper 1/3 c. oil 1 1/2 tsp. parsley, minced Halve, pit and peel avocados. Arrange on lettuce-lined plates. Drain salmon, and separate into chunks. Toss salmon lightly with green onion and celery. Fill avocados with salmon mixture. Combine remaining ingredients in a jar with tight-fitting lid. Cover and shake jar vigorously. Drizzle over salmon mixture.
