KENYAN MINCE CURRY Servings: 1/4 c. oil 1 c. sliced onions 2 T. curry powder 5 cloves garlic, crushed 1 T. grated fresh ginger 1 chopped sweet pepper 1/2 tsp. ground cinnamon 1 lb. ground beef 1 c. water 1 pkg. frozen peas salt, cayenne pepper, fresh chopped coriander Fry onions until brown in a large skillet. Mix in curry powder, then garlic, ginger and sweet pepper. Cook and stir constantly for a couple of minutes. Add cinnamon, meat and coriander. Stir well, add water and salt. Cover, cook on low heat about 20 minutes. Serve hot with rice.
