CHINESE BEEF & TOMATOES Servings: 4 1 lb. round steak, diagonally sliced 1 tsp. soy sauce 2 T. oil 2 onions, 1 inch rings 3 tomatoes, cut in 8 wedges 1 tsp. cornstarch 1 clove garlic, crushed 1 T. sugar 1 green pepper, 1 inch pieces 2 stalks celery, diagonally sliced 1/2 c. water, with 1 T. soy sauce, 1/2 tsp salt, 2 T. sugar, 1 tsp. cornstarch and 1/4 tsp. ginger Toss beef in mixture of soy sauce, cornstarch and sugar. Saute garlic in hot oil in heated skillet. Remove garlic and brown beef quickly. Add green pepper, celery and onions, and saute lightly. Add tomatoes. Cook 3 minutes, stirring occasionally. combine remaining ingredients, and add to skillet. Bring to boil, stir until thickened. Serve at once over hot rice. Source:
