JOAN'S CHEESECAKE Servings: 6-8 Crust: 1 1/4 c. graham crackers 3 T. sugar 1/3 c. melted butter Mix well, press into bottom of springform pan. Filling: 16 oz. cream cheese 2 eggs 2/3 c. sugar 2 T. vanilla 1/2 tsp. lemon extract 1 c. sour cream 2 T. sugar Blend sour cream, 1 Tablespoon vanilla, and 2 Tablespoons sugar. Blend cream cheese, eggs, sugar, 1 Tablespoon vanilla, and lemon extract. Pour into completed crust. Bake at 375F for 20 minutes. Cool 20 minutes, then top with sour cream mixture.
