CHOCOLATE MOUSSE PIE Servings: 12 Crust: 2 c. finely ground chocolate wafer cookies 1/4 c. melted butter Mousse: 1 lb. semi-sweet chocolate 6 eggs 2 c. heavy cream Crust: Grind chocolate wafers into fine meal. Combine with butter, line 10 inch springform pan bottom and sides. Filling: Melt chocolate in double boiler over low heat. Whip 4 egg whites until stiff. Whip cream until stiff. Add 4 egg yolks and 2 whole eggs to chocolate and beat until smooth and chocolate color lightens. Scrape bowl often to avoid lumps. Fold whites into chocolate mixture, being careful to fold only until smooth and blended. Pour slowly into pan. Cover and freeze overnight. Remove from pan and place on dessert platter. Decorate/garnish, and allow to soften.
