MINI CHEESECAKES Servings: 6-7 dozen Crust: 1 1/2 c. crushed graham crackers 1 T. sugar 1/4 c. melted butter Filling: 15 oz. condensed milk 8 oz. cream cheese 1/3 lemon, juiced 1 tsp. vanilla small can cherry pie filling Preheat oven to 350F. Mix together graham cracker crumbs, sugar and butter. Blend milk, cream cheese, lemon juice and vanilla together until smooth. In miniature-size paper cups, place a little of the graham cracker mixture, then 1 tsp. of cream cheese mixture (almost to top of cup). Bake at 350F for 10 minutes. Freeze or refrigerate to set, then top with one cherry and a little cherry filling each.
