PEANUT BUTTER & JELLY MUFFINS Servings: 2 1/2 c. milk 1 c. peanut butter 1/2 c. oil 2 eggs 2 c. all-purpose flour 2 c. wheat flour 2/3 c. brown sugar 2 T. baking powder 2 tsp. salt Beat on low speed until combined the milk, peanut butter, oil and eggs. Add remaining ingredients all at once on low speed until just barely combined. Fill muffin cups 1/3 full, then spoon in a scant teaspoon of jam, then cover to 3/4 full with batter. Bake at 375F for 15-20 minutes.
